GREEK FETA BOWTIE SALAD Recipe

½ lb dry bowtie or other pasta
1 tbsp olive oil
2 tbsps finely chopped fresh parsley
2 tbsps finely chopped FRESH dill
1 tsp fresh thyme
¼ lb Feta cheese
1 medium cucumber
1 large red bell pepper
5-6 medium sized radishes
small can sliced black olives-drained and sliced
2 tsp capers
1 tbsp coursly chopped red onion

LEMON DILL DRESSING
2 tbsp fresh lemon juice
1 garlic cloves-minced
¼ cup finely chopped fresh parsley
2 tsps minced shallots
3 tbsp chopped fresh dill
¼ cup vegetable oil
freshly ground pepper

Directions:
Directions:
Cook pasta in boiling pasts til al dente. Rinse in cold water and drain.Transfer to a serving dish and toss with olive oil. Add the parsley, dill and thyme to the pasta and mix well.
Cut the feta into ½ inch cubes or use crumbled feta. Peel the cake, half lengthwise. Core, removing seeds, then slice into ¼ inch thick crescent shaped pieces to yield
1 cup. Julienne slice the bell pepper. Slice the radishes paper thin. Add above ingredients plus the red onion and olives and capers. Make salad dressing and toss.
You could also add about ½-¾ cup torn spinach. It adds color.
