2 cups corn-I use either fresh canned white corn or fresh corn cut off the cob
1 avocado-cubed
1 pint cherry tomatos, halved
½ cup red onion-chopped fine

DRESSING
2 tbsp olive oil
1 tbsp grated lime zest
1 tbsp fresh lime juice
¼ chopped cilantro
1 tsp salt
¼ tsp pepper

Directions:
Directions:
Make dressing and chill
combine first 4 ingredients -fold gently
Drizzle on dressing and serve

OR-HERE IS ANOTHER DRESSING
juice of one lime
3 tbsp veg oil
1 tbsp honey
sea salt and fresh cracked pepper
1 clove garlic
dash of cayenne pepper
THIS IS ALSO DELICIOUS BUT MORE TIME CONSUMING!

This is such a wonderful go to salad for summer. It is best with fresh corn and homegrown tomatoes- cherry or just cubed large tomatos. I have another similar recipe that calls for a few drops of olive oil as the dressing but I prefer the lime dressing. Also, the other recipe calls for roasted corn kernels but, again, I don't think the time roasting is worth it!
