1 C butter, softened at room temperature
1 1/2 C confectioner's sugar
1 egg (room temperature)
1 1/2 tsp vanilla extract (recipe calls for 1tsp. I like extra)
1/2 tsp almond extract
2 1/2 C all-purpose flour
1tsp baking soda
1 tsp cream of Tartar

mix butter, confectioner's sugar, egg, vanilla and almond extract.
Mix together dry ingredients and add to the butter mixture
Blend together. Form the dough into a ball. Cover in plastic wrap and refrigerate 2-3 hours. (or until firm if you want to bake sooner. Roll out half of the dough, returning the other half to the refrigerator until you are ready to roll it out)
heat oven to 375 º(I usually bake at 350º to prevent over-browning)
If the dough is too stiff to roll, leave a few minutes at room temperature. Use just enough flour to avoid the dough sticking to the surface. Roll 1/4 inch thick and cut into desired shapes.
Place on a lightly greased baking sheet (I prefer a silicone sheet or parchment paper-lined pan).
sprinkle the tops with a mixture of cinnamon and sugar or leave plain if you plan to ice them or decorate with icing.
bake for 7 minutes or until just lightly browned. Smaller shapes require less time and close watching. cool slightly on the pan then remove to rack to cool.

I had lost my Mom's famous cookie recipe and my friend shared this one with me. I think this is the one Mom used. The taste is the same if the recipe is not. Thank you, Karen! This has been our favorite and is now adopted as our heirloom Christmas tradition loved by adults and grandkids alike. A must-have at Grandma's house
