Ingredients: 2 or more Beef Shank Bones

ham or ring bologna ( enough as the same amount of ground meat)

Directions: |
Directions:Put fresh or frozen shank bones in a stock pot. Cover generously with water. Generously salt and pepper the water. Add diced onion (1 large or more). Cook over high heat till it boils. Turn down to simmer and cook for 4 to 6 hours or until the meat falls off the bone and is tender. Remove the meat and bones and cool. Grind the meat with the ham or bologna and additional onion( ½ onion). Mix in 1 or 2 eggs.
Noodle recipe: Mix 1 beaten egg, 2 Tablespoons milk, ½ teaspoon salt. Add enough flour to make a stiff dough, about 1 cup. Roll out very thin and plop a heaping Tablespoon or more of the meat mixture in sections on the dough. Cut around each plop of meat and fold it into a bundle at the top. Pinch the dough together to stick. ( you may have to use a little water to stick it together.)
After all the bundles are made, taste the stock and add salt to taste. Put the bundles in boiling meat stock and boil for 20 minutes. . This recipe takes a lot of salt
THE DOUGH NEEDS TO BE VERY STIFF SO IT IS HARD TO ROLL OUT OR THE DOUGH WILL SPLIT. YOU MAY HAVE TO USE 2 OR MORE RECPES OF NOODLE DOUGH.
I use about 4 meaty shank bones for our family. I try to have the same amount of ham or bologna as the meat. |

Notes: This recipe came from Grandma Schaible. It is an old German recipe. It is wonderful to have for a cold Sunday winter day. I put it on the stove in the morning and grind the meat and make the noodles in the afternoon. It is not really time consuming, just hard sometimes to get the noodle dough just right. Wonderful flavor.
