Ingredients: |
Ingredients: 1 stick butter (can use LF if desired) 2 cups sugar ½ cup canned evaporated milk OR regular milk (can use LF if desired) 4 TBS cocoa
1 tsp vanilla ½ cup peanut butter
3 cups quick oats
Tools wax paper (if dropping cookie dough by spoonfuls) cookie sheet, greased (if pouring cookie dough into cookie sheet)

Directions: |
Directions:Stir butter, sugar, milk, and cocoa together in a sauce pan and heat over medium to a boil. Important: Stir only occasionally until it boils.
Let boil for 90 seconds, stirring constantly.
Remove from heat and add the vanilla, peanut butter, and oats. Mix well.
Drop by spoonfuls onto wax paper OR spread onto a greased cookie sheet.
If spread onto a cookie sheet, cool and cut into squares. |

A FRIENDSHIP FULL OF KINDNESS
In the months following Connie passing away, my mom and I were able to celebrate a holiday with the Shivers in Oklahoma. I can't remember what holiday for sure, but I think it was Valentine's Day. I was probably seven or eight years old. We arrived the day before the holiday.
When I awoke in the morning, Doug directed the kids to go check out the hearth. I found out the kids all had STOCKINGS (or something like that which was stuffed with goodies). I was especially impressed and surprised because I had thought stockings only came out at Christmas!
Now, imagine just how slack-jawed I was when Doug told me there was one for me, too! I ran over to the mantle, and there really WAS one for me! Abby, who has to be one of the most compassionate and empathetic kids of all time, was even waiting to open *her* stocking until I received mine. She was holding mine out to me, I remember, in excitement. What a friend--and she was only about six or seven years old!
I don't remember much of what was inside the stockings, but there was something like a stencil ruler and foil-wrapped candies. What was photo-etched into my memory wasn't the prizes themselves, or even the holiday, but that we were just weekend visitors and somehow Doug had thought to incorporate me as well. Wow! Now that's hospitality! --Teej
