Ingredients: DATE FILLING 1 lb (3 cups) dates, finely chopped ¼ cup sugar 1½ cups water
BARS ½ cup butter or margarine, softened (use plant-based butter if desired) ¼ cup shortening 1 cup brown sugar (packed) 1¾ cups flour 1 tsp salt ½ tsp baking soda 1 ½ cups quick-cooking oats
GARNISH powdered sugar (optional)
SERVING SUGGESTION (optional) warm raspberry compote or preserves for dipping room-temperature honey for dipping
Tools saucepan, medium bowl, medium electric mixer (optional, can cream by hand) baking pan, 13 x 9" & greased sifter (optional, if using powdered sugar to decorate)

Directions:Prepare date filling by putting all Date Filling ingredients into saucepan.
Cook over low heat, stirring constantly, about 10 minutes or until thickened.
Preheat oven to 400º.
Cream butter, shortening, and sugar.
Mix in remaining ingredients.
Press half the mixture evenly into bottom of baking pan.
Spread filling over top.
Top with remaining crumble mixture, pressing lightly.
Bake 25-30 minutes or until light brown.
While still warm, cut into bars about 2x1½"...or a reasonable facsimile thereof. Or, in our case (Deborah & Teej), a total guesstimate that is an irrational facsimile thereof!!!
Alternately, you can cut these into squares and, once cooled, adorn with powdered sugar. If you like, you can use cardstock to cut out a shape (such as a Christmas tree or candle), lay the cardstock onto the date square, and then sift powdered sugar onto the cut-out. Carefully remove the paper and, viola, you have edible art! |

A DATE WITH DATES
Benefits of dates (the kind you eat, not the kind you go on!) include the nutrition they provide, including fiber, potassium, manganese, and antioxidants. Dates are also believed to potentially lower inflammation in the brain.
Deborah has always been a whiz at remembering dates, especially birthdays and anniversaries. Our whole family turns to her to ask what year something happened. One of her favorite ways to review memories is through dated photographs or calendar entries. When she's researching something, she is always curious about dates, like when something was invented or what year someone was born.
So if you ever want a date, just ask Deborah for one!
