3/4 c. sugar
3/4 c. shortening (uses pre measured crisco bars)
1 c. cooked, mashed carrots (only until chunky) - cooled
2 eggs
1 tsp. vanilla
2 c. flour (all purpose flour)
2 tsp. baking powder
1/4 tsp. salt

Once cookies are cool, frost with orange icing.

Mix all ingredients, drop by teaspoon on greased pan (or use parchment paper). Bake at 375º 11-12 minutes or until no imprint remains when touching lightly. Cool before icing.

Orange icing: Grate & juice 1 orange (1 1/2 T.). To the juice & grated rind, add 1 T. softened butter, 1 1/2 c. powdered sugar to get right consistency for spreading on cookies. If too thin, add a little more sugar. Makes 3-4 dozen.
