1 1/2 C skim milk
1 C yellow cornmeal
3 T canola oil
1 large egg white
1 C flour
3 T sugar
3 1/4 t baking powder
1/2 t salt
1/4 t baking soda

Directions:
Directions:
Preheat oven to 400. Spray an 8 or 9 inch square pan with nonstick cooking spray. In a small bowl whisk together milk, cornmeal, oil, and egg white. In a medium bowl mix combine flour, sugar, baking powder, salt and baking soda. Stir the cornmeal mixture into the flour mixture just until the dry ingredients are moistened. Do not overmix. Pour batter into pan. Bake for 20-25 minutes until golden and springy to the touch.
