Shortbread:
2 cups (4 sticks) butter, softened
1½ confectioner's sugar
1 cup granulated sugar
2 Tbsp. Vanilla
4 cups sifted all-purpose flour

Caramel:
2 cups granulated sugar
¾ cups (1-1/2 sticks) butter
1 cup heavy whipping cream
1 tsp sea salt

Preheat oven to 350º. Butter a 13 x 9 baking dish

For Shortbread: In a bowl, whip the butter until fluffy. Add sugars and mix well. Add vanilla and mix well. Add flour, 1 cup at a time, and mix until a soft ball forms. Put half of the dough into the refrigerator. Press the remaining dough into the bottom and halfway up the sides of the baking dish. Prick the dough with a fork and bake 20-25 minutes or until edge are slightly browned.

Reduce the oven to 325º.

For Caramel: Place sugar in a saucepan over low heat and stir every few minutes, until melted and caramel-color. Add butter and stir gently with a wooden spoon until melted. Increas the heat to medium and cook until butter is just incorporated. Add cream slowly and turn off heat. Continue to stir until cream is well blended. Add sea salt. Set aside for 10 minutes. Reserve 1/2 cup caramel sauce.

Pour remainder of caramel sauce over the baked shortbread. Sprinkle lightly with salt. Remove dough from refrigerator and crumble over salt and caramel. Drizzle reserved sauce over the top and bake for 25 to 30 minutes or until slightly brown.

Cut into bars when cooled.
