2 ⅔ c. all-purpose flour
1 c. margarine or butter (2 sticks), softened
2 tsp. cream of tartar
1 ¼ c. sugar
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. vanilla extract
2 large eggs

2 Tbsp. sugar
2 tsp. ground cinnamon

1. Into large bowl, measure flour, margarine or butter, cream of tartar, baking soda, salt, vanilla extract, eggs and sugar. With mixer at low speed, beat ingredients until well blended, occasionally scraping bowl with rubber spatula. Shape dough into a ball; wrap with plastic wrap. Refrigerate dough 2 hours or until easy to handle.
2. Preheat oven to 400º . In small bowl, mix 2 Tbsp. sugar with cinnamon. With hands, shape dough into 1 1/2-inch balls. Roll dough balls in cinnamon mixture to coat lightly. Place dough balls, about 2 inches apart, on ungreased large cookie sheets. Bake cookies 10 to 12 minutes until they are lightly browned. Remove cookies to wire racks to cool. Store cookies in tightly covered container.
