3/4 cup molasses
1/2 cup butter
1 Tbsp baking soda
1 Tbsp ginger
1/2 Tbsp cinnamon
3/4 cup **table cream**
4 cups of flour (keep more on hand)

Directions:
Directions:
Place molasses in small saucepan and bring to a boil, immediately remove from heat
Mix in butter until melted and mix together well

Dissolve baking soda in a small amount of water (1 oz ish)

Place molasses in a mixing bowl and add in:
baking soda (made wet)
ginger, cinnamon
cream

Work in flour and then cover tightly (seal saran right overtop of the batter, leave no air) keep in fridge at least overnight, until ready to rollout. It will keep for 1-2 weeks in the fridge.

When ready, work with the dough a small batch at a time, adding flour to rollout and cut shapes (keep the rest in the fridge)

Bake at 375º for 7-8 minutes.
**Watch closely, you do not want them to be too soft when they come out, but stiff enough to move them onto a cooling sheet. The bottoms will burn if left too long.
