Personal Notes:
The reason these cookies are called Refugee cookies is because they were given out to Refugees when they arrived in Utah. I imagine this was done because of filling ingredients as well as something sweet! Welcome Dear Refugees! A friend of ours would make large batches of these cookies once a week and distribute them! When I make them, I feel like I am honoring my wonderful pioneer heritage-both women and men. Their courage and determination has inspired me for years. I also think of the sweet and impressive refugee families we have helped over the years, especially at Christmas time. They also show so much courage and are doing great things!

I usually make them around the 24th of July-Pioneer Day in Utah!
