4 cups chopped fresh peaches
2 tablespoons lemon juice
5 cups sugar
1 package powdered pectin
1/2 teaspoon Cinnamon or Allspice (depending on your taste)

Directions:
Directions:
Peel peaches and chop peaches until you have 4 cups chopped peaches. I usually just mash them up with my hands.
Place peaches, lemon juice and pectin in a large pot and place on high heat, stirring constantly, bring to a full rolling boil.
Add the sugar and spices all at once and being to a full bubbling boil again and boil hard for 1 minute. Stirring constantly.
Remove from heat, skim the foam off. Pour immediately into sterile canning jars. Process in boiling water bath for 5 minutes.
