1 pound cooked boneless chicken breast, shredded,
1TBSP olive oil
1-one green pepper, cut into thin strip slices
1-one red pepper, cut into thin strip slices
1-one small to medium yellow onion, cut into thin slices
¼ tsp kosher salt
8 oz. cream cheese, softened and cut up into pieces
8 oz. cheddar cheese, shredded
1½ tablespoon of fajita seasoning mix
salt and pepper to taste
fresh cilantro or chives for garnish

Directions:

1—Preheat Oven to 350º F. Lightly grease a 9x13 baking dish; set aside. Shred the baked chicken and transfer to a large mixing bowl. Set aside.

2—Heat olive oil in a skillet pan over medium-high heat. Add strips of pepper and onions to the hot oil. Sprinkle with salt and sauté for 4-5 minutes until softened. Remove from heat and add to the chicken. Set aside.

3—In a large bowl, combine the cream cheese, HALF the cheddar cheese, fajita seasoning mix, salt, and pepper; mix until thoroughly combined.

4—Add cream mixture to the chicken and peppers; mix well.

5—Transfer the chicken mixture to the prepared 9x13 baking dish and sprinkle the top with the remaining cheese.

6—Bake at 350º F. for 25-30 minutes or until mixture is hot and bubbly. Remove from oven and garnish.
