2 lb boneless skinless chicken breasts (baked)
1/2 cup roughly chopped pecans
1/2 cup mayonnaise
1/2 cup greek yogurt
1 tablespoon dijon mustard
1-2 cups red grapes, halved
2-4 stalks celery (with leaves), diced
3 green onions (green and white parts), sliced
5 tablespoons chopped parsley
1 lemon, juiced
salt and pepper, to taste

Directions:
Directions:
Toast the pecans at 350 for 5-10 minutes. Slice and dice the celery, green onion, grapes, and parsley. Add those ingredients to a mixing bowl along with the mayonnaise, Dijon mustard, and lemon juice. Season with salt and pepper. Mix everything together (aside from the pecans), and add more of anything to taste.

Add the pecans when you're ready to eat, otherwise they'll get soggy if they sit. Enjoy on a sandwich or over a bed of greens.
