Maple-Ginger Chicken Burgers w/Granny Smith Slaw Recipe

¾ c. packaged coleslaw (about half the bag) 1 small Granny Smith apple, cored and sliced into matchsticks 2½ T. ginger vinaigrette salad dressing 1 T. rice wine vinegar pepper to taste
BURGERS:
8 oz. chicken sausage with apple and maple (Johnsonville, Applegate, or similar) ¼ c. finely chopped green onion 2 T. ginger vinaigrette salad dressing ½ t. ground ginger 16 oz. ground chicken breast
4 hamburger buns

Directions:Prepare the slaw by mixing the ingredients in a small bowl. Stir to combine. Cover and chill until ready to eat.
If the sausage has casings, cut the casing off. Otherwise, dice the sausage and add it to a large bowl. Add the rest of the burger ingredients and mix well. Divide into 4 equal parts and shape each section into a patty about ½ inch thick. If the mixture is too sticky, spray your hands with cooking spray or wet with a little water while you make the patties.
Grill until done.
Place one patty on the bottom half of each bun and top with ⅓ cup of cole slaw before topping with the other half of the bun. Serve hot.
*You can also place the patties on a baking sheet coated with cooking spray and broil them for 5 minute per side or until a meat thermometer registers 170º. |

Notes: I found this recipe very early in our married life in a magazine ad for a specific salad dressing. I can't find the specific salad dressing anymore, but the recipe survives and still tastes amazing.
