• 6 eggs
• 1 cup of sugar
• 1/2 cup of oil
• 1 lemon zest
• 2 cups of flour
• 3 teaspoons of magic or baking powder

Directions:
Directions:
• Whisk all ingredients in a bowl until the batter is smooth.
• Heat the Pizzelle iron.
• Drop batter by teaspoonfuls onto the center of the iron, close the lid and cook for about 30 seconds.
• Remove cookies carefully from the iron and let cool.

One of my strongest memories of my Mom takes place in the kitchen and reading her handwritten recipe cards. Looking back at this recipe card she wrote brought up some wonderful memories and emotions. Every year just before Christmas when I was a kid, my Mom and Grandmother would spend an entire weekend baking cookies & cake. Traditional Italian cookies were the main event, but as a kid my favorite was the Pizzelle.👩‍🍳🍪☕
