3 c. all-purpose flour
½ tsp. baking soda
½ tsp. baking powder
1 c. (2 sticks) butter
2 eggs
1 c. sugar
1 tsp. lemon extract

Directions:
Directions:
In large mixing bowl, sift together flour, baking soda, and baking powder. On low speed of mixer, cut in butter until mixture resembles cornmeal. In a small mixing bowl, beat eggs, add sugar and lemon extract and beat thoroughly. Blend egg mixture into flour-butter mixture. Chill dough.

On lightly floured surface roll dough to ⅛" thickness, cut with cookie cutters. (If not frosting, decorate before baking). Bake in preheated oven 375º for 6-8 minutes or until lightly browned. Remove to cool.

If you are going to frost these, let cool completely before frosting. To frost:

3 c. confectioners sugar (powdered sugar)
1 tbsp. light corn syrup
2 tbsp. butter, softened
3 tbsp. hot water

In small mixing bowl beat together sugar, corn syrup, butter and water until smooth. If frosting is too thick, additional water may be added. You can also add food coloring to dye the frosting if desired.

Yields 1¼ cups
