2 cups grated carrots
2 cups grated potatoes
2 cups all purpose flour
2 cups white sugar
1 1⁄2 cup raisins
1 cup currents
1 cup butter or margarine
1 tsp each cloves, nutmeg & cinnamon
2 tsp soda

Directions:
Directions:
Cream butter and sugar.
Add carrots and half of potato. (1c)
Mix flour, fruit. Add to mixture.
Add sifted flour and spices.
Dissolve soda in remaining 1 cup of potato. Mix lightly.
Pour into buttered casserole mold or pudding bag. (I use a bunt pan and cover with brown paper).
Put in steamer with water, and cook on top of the stove for 3 hours.
Check it doesn’t go dry.
May be cooked, frozen and steamed later.

You would never know there’s potatoes in this!

Serve with Brown Sugar Sauce.
