1 T. olive oil
2 cloves garlic, minced
1 tsp. minced fresh ginger
1/2 tsp. dried red pepper flakes - optional
16 uncooked jumbo shrimp, cleaned
1/4 C. minced fresh cilantro
8 lime wedges

Directions:
Directions:
Mix olive oil, garlic, ginger and crushed red pepper in a shallow dish. Add
shrimp, turning to coat with oil mixture. Let stand at room temp. for 15
minutes or refrigerate up to two hours.

Prepare grill or preheat broiler. Soak 4 wooden skewers in water for 30
minutes. Thread four shrimp on each skewer. Grill or broil just until
cooked through - about three minutes per side. Springle shrimp with minced
clinatro. Serve with lime wedges to squeeze over shrimp.
