1/4 lb green beans
1/4 lb. mushrooms
1 medium sized potato, peeled
1-2 medium sized carrots, peeled
1-2 stalks celery
1 medium onion
1 pkg. Manischewitiz, Goodman's or other Jewish brand vegetable soup mix (containing barley, dried lima beans, dried split peas, etc.)
1 each med. bunch fresh dill, parsley, celery leaves, washed and tied with string
1 medium parsnip, peeled
1/2 lb. frozen green peas
salt & pepper to taste

Peel, clean, and cut all the fresh vegetables very small. Place in 3 qt. pot together with contents of soup mix package (except smaller package of flavoring and dried alphabet noodles). Cover with water, add salt to taste. Bring to boil, covered, then simmer, partially covered. When lima beans are half done—about 1/2 hr—add "soup 'n greens" (dill, parsley, celery tops, parsnip). Bring to boil again and simmer until all beans are fully cooked. Add flavorings/noodles and frozen peas. Bring to simmer & cook 10 minutes more. Remove greens and parsnip (can cut the parsnip small and return to soup), adjust for salt, add pepper if desired. Delicious served with a pat of butter. I double these quantities for soup that keeps well refrigerated.

This was a specialty of my maternal grandmother's—an Eastern European, Jewish soup that I have not found in many places. The small cut veggies and dill give it a unique character (if you don't like the flavor of dill, it should be good without it). Grandma Ida would serve a large bowl to everyone at the beginning of a Thanksgiving dinner (very filling!). Serve as a main dish accompanied by good bread and cheddar or other cheese.
