2 cups flour
12 oz. finely chopped nuts of your choice: pecans, walnuts, pistachios, almonds, etc.
1 cup softened butter
1 lb. ricotta cheese
2 tsp. vanilla extract
2 large eggs
4 cups flour
1 Tbs. baking powder

Icing:
2 cups confectioners sugar
3 Tbs. milk
Decorate with sprinkles, a cherry, or, the nuts used in recipe

In a food processor, add nuts and process until finely chopped. Set aside
Cream butter and sugar at a high speed until light and fluffy (about 5 minutes.)
Reduce mixer speed to medium and add ricotta, nuts, vanilla and eggs until well blended.
Slowly add flour, baking powder until all ingredients are well blended.
Drop dough by level tablespoons, or small scoop, onto ungreased cookie sheet.
Bake at 350º for 15 minutes or until cookies are a golden brown. Cookies will be soft,

When cookies are cool, dip into icing and decorate.
Set cookies aside and allow icing to dry completely.
