2 ½ lbs. boneless cooked chicken, cut in small pieces
2 ½ T. curry power
1 ½ T. Thai yellow curry paste
1 gal. chicken stock
1 ½ lbs. new potatoes, cubed
2 ½ c. carrots, peeled and cut in ½ in. pieces
2 c. celery, cut in ½ in. pieces
3 oz. chopped garlic
Salt and pepper

Sauce
½ lb. butter
2 c. flour
3 c. granny smith apples, peeled, cored, and cut into small pieces
½ c. honey
1 c. cream
2 oz. of butter, cubed

Topping
½ c. fresh cilantro leaves, chopped
1 c. scallions, chopped

Directions:
Directions:
Combine curries and chicken stock in lg. pot and bring to boil. Simmer 15 min. Add potatoes, carrots, celery, onions, and garlic and bring to boil. Simmer 15 min.

In lg. sauce pan, melt butter and slowly add flour. Cook until it reaches sauce stage.
Add to soup and stir constantly. Add apples and honey and bring to boil. Add cream and butter cubes. Add cooked chicken. Store in refrigerator for a day.

Reheat slowly and garnish with cilantro and scallions.

Notes: Lots of prep but excellent on a fall or winter day! Serve with crusty rolls or French bread.
