2 cups finely chopped or shredded zucchini
1 cup vegetable oil
3 eggs
3 tsp cinnamon
1 tsp baking soda
1 tsp salt
1/2 tsp baking powder
3 cups flour
2 cups sugar
2 tsp vanilla
1/2 cup chopped nuts

Directions:
Directions:
Blend zucchini, oil and eggs. In a separate bowl, sift together salt, soda, baking powder, flour and cinnamon. Add to zucchini mixture. Add sugar, vanilla and nuts. Pour into 2 greased and floured loaf pans. Bake at 325 º for 1 hour.
