1 c. Quick Oatmeal
1 cube Margarine
1 c. Brown Sugar
1 c. White Sugar
2 Egg Yolks
1 tsp. Vanilla
1 tsp. Cinnamon
1 ⅓ c. & 3 tbsp. Flour
1 tsp. Soda Powder

Topping:
⅔ c. Brown Sugar
1 c. Coconut
4 tbsp. Cream (Can Use Evaporated Milk or Half-n-Half)
3 tbsp. Butter
2 Egg Whites (Whipped)
½ - 1 c. Nuts (Walnuts or Pecans)

Directions:

Cake:
Mix First 6 Ingredients into a large mixing bowl
In a separate bowl pour 1 ¼ c. boiling water over 1 c. quick oatmeal. (Let Stand 2 Min)
Mix the remaining 2 ingredients and oatmeal mixture into the large mixing bowl and mix well.
Pour into 9 x 12 Baking Pan
Bake at 350 for 30 Minutes
While Hot Spread Topping & Let Brown (15 min)

Topping:
Mix together in a saucepan until melted and blended and then spread on cake.
(Try spreading on a baked cake and then broil until Coconut is just brown, doesn't take that long).

This is a family recipe passed down from my Great Grandmother. It is a favorite of ours. I hope you enjoy it just as much as we do!

NOTE: German Chocolate Cake Frosting is a Great Substitute!
