Phyllo Dough
3 boxes (???) frozen chopped spinach
2 bunches scallions
2 Tbsp butter
2 med onions
salt, pepper to taste
2 pkg feta cheese (16 oz???) (or bleu cheese)
Grated Parmesan
2 (small containers???) cottage cheese (small curd)
3 c shredded mozzarella
1 egg

Directions:
Directions:
1. Cook spinach according to pkg directions. Preheat oven to 350.

2. Saute scallions and onions w salt and pepper. Add all cheeses and egg, mix well.

3. Layer phyllo dough into baking dish, with butter (or olive oil) in between layers. Spoon in filling and fold dough over.

4. Bake in preheated oven for 40 minutes. when done, crust is browned and insides are bubbly.
