8 medium russet potatoes
8 eggs
20 oz. mayonaisse

Directions:

Boil the potatoes in a pot on the stove until you can easily poke them with a fork, 20-25 minutes. Drain water from the pot and let sit until cool. Peel potatoes and cube into bite size pieces. Put in a large mixing bowl. Set aside.

Boil water in a pot. Add whole eggs, DO NOT CRACK, and cook for 10 minutes. Drain water from pot. Put eggs in an ice water bath for 10 minutes. Peel and dice eggs and add to the large mixing bowl with the cubed potatoes.

Add mayonnaise to bowl and mix ingredients thoroughly. Salad should be thick but not dry. If dry, add more mayonnaise. Let chill in fridge for several hours before eating.

My grandma Muir used to make this salad and let it sit in her cupboard for 24 hours before we ate it! We ate grandma's potato salad at every family barbecue, and to my knowledge, no one ever got sick from lack of refrigeration. Even so, when I make it we keep it refrigerated so it doesn't spoil.
