1/2 cup butter or margarine
1/2 cup semisweet chocolate chips
1 tablespoon instant coffee
3/4 cup granulated sugar
3/4 cup brown sugar, packed
2 eggs
2 teaspoons vanilla
2 cups all-purpose flour
1/3 cup unsweetened cocoa
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup semisweet chocolate chips

Melt butter and 1/2 cup chocolate chips in large saucepan over low heat. Stir in coffee crystals; cool 5 minutes. Stir in sugars, vanilla, and eggs. Combine flour, cocoa, baking powder, and salt in a mixing bowl. Stir into coffee mixture. Stir in the one cup chocolate chips. Drop dough by rounded tablespoonfuls 2 inches apart onto lightly greased cookie sheets.
Bake in 350 degree oven 10 minutes. Cool on cookie sheet 1 minute. Remove; cool on wire rack. Makes 30.
