1/2 c sugar
2 c milk, scalded
1/2 c sugar
2 beaten egg yolks
1/4 tsp salt
1 tsp vanilla extract
1/2 c chopped black walnut meats
2 stiff beaten egg whites
1/2 pt heavy cream

Directions:
Directions:
Caramelize 1/2 c sugar; add milk slowly and stir until sugar dissolves. Add remaining 1/2 c sugar and egg yolks; cook in double boiler until thick. Remove from heat; add salt, vanilla extract, and nut meats. Cool. Fold in egg whites and cream, whipped to custard consistency. Freeze in tray of automatic refrigerator until firm, about 2 1/2 to 3 hours.
