2 Ahi Tuna Steaks (about 4 oz each, at least 1.5" thick)
2 Tbs Soy Sauce
1 Tbs Toasted Sesame Oil*
1 Tbs Honey**
1/2 tsp Kosher salt
1/4 tsp Black pepper
1/4 tsp Cayenne pepper
1 Tbs Canola or Olive Oil

Green onion, Toasted Sesame seeds, Lime wedges for serving (optional)

Pat the Ahi tuna steaks dry with a paper towel. Place on a plate or inside a plastic bag.

Mix the soy sauce, toasted sesame oil, honey, kosher salt (omit if marinating for more than a couple hours), pepper and cayenne pepper until honey is dissolved.

Pour over the tuna steaks and turn over to coat completely.

Optional:
- allow to marinate for at least 10 minutes, or up to overnight in the refrigerator.
- or, reserve 1-2 tsp prior to marinating the fish for drizzling on top after cooking.

Heat a medium size non-stick skillet or a well-seasoned cast iron skillet on medium high until very hot (medium or medium-high for non-stick). Give the cast-iron skillet 3-5 minutes to get hot ( 1 minute for nonstick).

Add the canola oil to the hot pan. Sear the tuna for 2 minutes on each side for medium rare (1.5 minutes for rare, 3 min for medium). Decrease time if steaks are less than 1.5 inches thick.
