2 cups sugar
2 cups light brown sugar
2 cups canola oil
4 eggs
2 tsp. vanilla
4 cups self-rising flour
2 tsp. soda
1 ½ quick cooking oats
4 cups corn flakes
1 cup nuts of choice
1 cup raisins
1 cup coconut

Directions:

In a large (very large) bowl, mix sugars and oil well. Add eggs and vanilla and mix well. Add flour, soda, oats, and corn flakes. Mix well. Add nuts, raisins, and coconut. Mix really well (easier said than done). Drop by teaspoonfuls 2 inches apart on a greased or silicone mat lined baking sheet. Bake at 350º 11 to 12 minutes.

This recipe was given to me by my friend Annette Hammond after she brought these cookies to feed a group in training at our church. They were delicious and never-ending. I think that Annette told me she got the recipe from Marguerite Keeter. As the name suggests, you need a BIG bowl to mix these cookies in. Your arms will get a workout as there comes a point where your cannot use a mixer.
