1 cup shortening
2 cups brown sugar
¾ cup chopped apples, pared & peeled
1 cup raisins
1 egg, beaten
1 tsp vanilla
2 ½ cups flour
2 tsp baking powder
1 tsp salt
½ cup milk
¼ cup orange juice
2 tbsp finely grated orange juice
Directions:

Cream together shortening, sugar, egg, and vanilla; set aside.
Sift together flour, baking powder, and salt. Add sifted mixture alternatively with milk, orange juice, and orange rind. Drop a tablespoon onto a greased cookie sheet. Bake @ 350º F for 10-12 minutes.
