2 large egg whites
3 cups sugar
2/3 cup water
1/2 cup light corn syrup
1 teaspoon vanilla extract
1 cup chopped pecans

Directions:
Directions:
Place egg whites in the bowl of a stand mixer; let stand at room temp. for 30 min. Line 3 15 X 10 X 1 in. pans with waxed paper.

In large bowl or heavy saucepan, combine sugar, water & corn syrup; bring to a boil, stirring constantly to dissolve sugar. Cook w/o stirring, over medium heat until a candy thermometer reads 252º (hard-ball stage). Just before the temp is reached, beat egg whites on med. speed until stiff peaks form.

Slowly add hot sugar mixture in a thin stream over egg whites, beating constantly and scraping sides of bowl occasionally. Add vanilla. beat until candy holds its shape, 5-6 min. Do not overmix or candy will get stiff and crumbly. Immediately fold in pecans

Makes approximately 60 pieces.
Quickly drop by heaping tsps. onto prepared pans. Let stand at room temperature.

Do not double the recipe to make more. Just make 2 different batches or it
will not work the way you want it to.

Also, you can change the pecans for your favorite nut.
