2 lbs. mild Italian sausage, casings removed OR 1 lb. beef neck or rib bones, browned
1 small onion, chopped
4 garlic cloves, minced
1 (28 oz.) can diced tomatoes
2 (6 oz.) cans tomato paste
2 (15 oz.) cans tomato sauce
2 cups water
3 tsp. basil
2 tsp. dried parsley flakes
1 ½ tsp. brown sugar
1 tsp. salt
¼ tsp. crushed red pepper flakes
¼ tsp. black pepper
¼ cup red wine (good quality!)

1 pound spaghetti
Parmesan cheese for serving

Directions:
In large, heavy stockpot, brown Italian sausage or neck bones. Add onions and continue to cook, stirring occasionally until onions are softened. Add garlic, tomatoes, tomato paste, tomato sauce and water. Add basil, parsley, brown sugar, salt, crushed red pepper and black pepper. Stir well and barely bring to a boil. Stir in red wine. Simmer on low, stirring frequently for at least 1 hour. Longer is better but don't let it burn!

Cook spaghetti according to package directions.

Discard bones because meat will fall off. Spoon sauce over drained spaghetti and sprinkle with parmesan cheese.

Eons ago Grandma Viruso taught me how to make spaghetti sauce and until I found this recipe (recipezaar.com), I was always a bit disappointed with my efforts. I think Grandma Viruso would approve of my adaptations to this recipe.
