1 1/4 cups margarine
3/4 cup firmly packed brown sugar
1/2 cup granulated sugar
1 egg
1 tsp. vanilla
1 1/2 cups all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/4 tsp. nutmeg
3 cups Quaker oatmeal
Optional: raisins, pecans, chocolate chips, butterscotch chips, peanut butter chips

Heat oven to 375º. Beat together margarine and sugars until light and fluffy. Beat in egg and vanilla. Combine flour, baking soda, salt, and spices; add to the margarine mixture, mixing well. Stir in oats and any additions. Drop by rounded tablespoonfuls onto ungreased cookie sheet or silicone baking sheet liner. Bake 8 to 9 minutes for a chewy cookie, 10 to 11 minutes for a crisp cookie. Cool 1 minute on the cookie sheet until firm enough to lift; remove to a wire cooling rack. Store in a tightly covered container.

This recipe had been on the Quaker oatmeal box since 1955. They are what I consider the original and best oatmeal cookie. I prefer to use old-fashioned oats (although quick-cooking will work) and usually add pecans and raisins. Toast the pecans before adding them. Other additions could be chocolate, butterscotch, or peanut flavored chips.
