1lb. Cream cheese
1/4 lb. butter or margarine, melted
1 lb. creamed cottage cheese (Axelrod’s whipped best)
1-1/2 cups sugar
4 eggs beaten lightly
2 Tablespoons lemon juice
1 teaspoon vanilla
3 Tablespoons flour
3 Tablespoons cornstarch
1 PT. Sour cream
1 teaspoon grated lemon rind (optional)

Pre heat oven to 325ºF.

In large mixing bowl, beat the cream cheese and cottage cheese. Gradually beat in the sugar. Add the beaten eggs, lemon juice and vanilla.

In a cup, stir together the flour and cornstarch and gradually beat into the cheese mixture. Add the melted butter and finally, the sour cream. Mix well. (Fold in optional lemon rind, if using)

Pour batter into a greased (with PAM) 9inch Springform pan and bake in a moderately slow oven for 1 hour and 20 minutes, or until set in the center. Turn off oven, leaving cake in for 2 hours more. Remove from oven and let cake come to room temperature.

Chill thoroughly in refrigerator before removing rim and serving.
