2 c. white sugar
2/3 c. half and half
5 tbsp. Karo syrup
2 sq. Unsweetened baking chocolate
1 tsp. Pure vanilla
2 tbsp. Butter
1 c. Chopped nuts

Directions:
Directions:
Place the sugar, half and half, Karo syrup and unsweetened chocolate in a flat bottomed steel pan, mixing it together...scrape the sides and bottom. Place on the stovetop on medium heat. Place a candy thermometer into the pan and continue cooking until the chocolate has melted then stir once more and scrape with a spatula. Continue cooking without further stirring until it reaches the soft ball stage or 236° f.

Pour hot ingredients into a heat proof bowl with enough room for beating. Add the vanilla and the cold butter into the hot ingredients but do not stir it at all. Leave the cooling fudge in a place where it will not be disturbed until it cools to approximately 150° f.

Once it has cooled start stirring the fudge with a stiff spoon until the fudge begins to solidify, add the nuts and continue to beat the fudge until it loses its gloss and becomes nearly impossible to beat...then turn it out into a small loaf pan that is oiled with butter.

Leave it to set up until completely cooled before cutting.
