1 c unsalted butter (cut into 1 tbsp cubes)
3/4 c light brown sugar
2 eggs
1/2 c white sugar
1 c cake flour
1 1/2-1 3/4 c all purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp sea salt
2 c walnut
2 c semi sweet chocolate chips
Directions:
Directions:
Preheat oven to 400º
Place butter pieces into mixing bowl of a stand mixer and cream with paddle blade. Once creamed, add in brown and white sugars; mixing until blended well.
Add eggs one at a time and beat on medium speed for about 30 seconds each.
Turn mixer off and add in cake flour, all purpose flour, baking soda, baking powder and sea salt; pulse ingredients until mixed together (don't over mix)
Add in walnuts and chocolate chips, pulse to combine. Place heaping spoonful of batter (2.5oz) on a greased cookie sheet about 2" apart. (don't roll or mold the pieces just plop on the sheet)
Bake for 7-8 minutes leaving somewhat of an uncooked center but yet golden brown on top. Let them rest on the sheet pan for 5-10 minutes before placing them on a cooling rack.
*Note You can replace walnuts with any type of nut or eliminate nuts and use a total of 4 c of chocolate chips to keep the volume of the cookie.
