3 sticks (12 ounces) unsalted butter, at room temperature
⅔ C. sugar, plus more for sprinkling
1⅓ C. unbleached flour (King Arthur brand preferred by Yankee Magazine)
½ C. cornstarch
Pinch of salt
1½ Tbsp. dried lavender flowers

Directions:
Preheat oven to 325º. Using a mixer, cream butter and sugar well. In a separate bowl, combine dry ingredients; add to creamed mixture and mix until blended. Add lavender. Gather dough into a ball, pat into a disk, and wrap in plastic. Chill 30 minutes to 1 hour. On a lightly floured board, roll out dough to ⅛-inch thickness, cut with a cookie cutter of your choice, and bake until lightly browned, 15 to 20 minutes. Sprinkle with sugar or serve with favorite jam or jelly.
