3 lbs boneless skinless thighs
flour
chicken fat/vegetable oil
4 cloves garlic
1 bunch of parsley
6 cups chicken broth

Directions:
Directions:
Salt and brown chicken in a little bit of fat.
Make a rue with ½ cup of fat and about 10 heaping tablespoons flour. When slightly brown (color of brown eggs) add garlic and parsley and simmer for a couple of minutes. (May have to adjust flour and fat), Take from flame and add enough water to cover the chicken. Stir well over medium heat. Add to chicken and cook covered for about 1 hour.

Serve with rice.

*add parsley to rice for color
*to thicken gravy: take some gravy from the pot and add flour to it. Pour back into pot.
