1 bag of thin egg noodles
1 can diced tomatoes
1 medium diced onion
2 cloves fresh garlic chopped
2 T vegetable or yellow olive oil
1 T Adobo seasoning

Directions:
Directions:
1) Heat oil on a medium sauce or saute pan with lid, stir in onions and fry for about 4 minutes. Add egg noodles and brown slightly. When they are almost brown add chopped garlic for another 2 minutes.
2) Add a can of diced tomatoes and stir, add 1 can of water. Add seasoning and pepper to taste
3) Bring to a boil with a lid on the pan part way and then a low simmer until most of the liquid has been cooked off and the noodles are tender

Variations can include, 1T chicken bullion powder, and / or 4oz tomato sauce.

My Mom and Grandma Fraga always refereed to this dish as sopa. However sopa in Spanish means soup. This dish is not a soup, but I don't know what else to call it.
