4 cups fresh zucchini, use small to medium size. Cut lengthwise and slice half moons 1/4"
1 medium onion chopped.
3 T vegetable or yellow olive oil
3 cloves fresh garlic
1 bay leaf
11/2 tsp Adobo seasoning, or any other you have.
Ground black pepper as needed.
1 can diced tomatoes with juice
1 can of water
2 T Parmesan cheese

Directions:
Directions:
1) Heat oil on medium heat, saute chopped onions for 3 - 4 minutes, add chopped garlic for an added 2-3 minutes.
2) Add zucchini and saute for 4 more minutes.
3) Add diced tomatoes, seasonings and stir, add water and bring to a boil.
4) Add 1 T of Parmesan cheese and stir in, Reduce heat to a simmer until zucchini is tender and about half of the water has evaporated.
5) Serve with Parmesan cheese to taste.
