2 cups raisins
1 cup water

3 ½ cups flour*
1 tsp. baking powder
1 tsp. baking soda
½ tsp. cinnamon
1tsp. salt
½ tsp. nutmeg

1 cup butter/margarine
1 ¾ cup white sugar
3 eggs
1 tsp. vanilla

½ cup walnuts

Directions:

1. Place water and raisins in a small sauce pan and bring to a boil. Boil 3-4 minutes. Set aside to cool.

2. Preheat oven to 375ºF.

3. Grease cookie sheet.

4. Combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.

5. Cream together butter and sugar. Beat in eggs and vanilla. Stir in raisins (including remaining liquid from boiling).

6. Add dry ingredients. Add walnuts.

7. Drop by tablespoon onto cookie sheet.

8. Bake 12 - 15 minutes or until firm.

9. Cool 2 minutes on cookie sheet then transfer to cooling racks.

* Flour should be gluten free all purpose blend with xanthum gum.
** When measuring out flour don't scoop it into the measuring cup, instead spoon it into the measuring cup.
