Ingredients: Filling-
58 oz Cream Cheese- Softened ¼ tsp Vanilla ¾ tsp Grated Lemon Peel 1 ¾ Cup of Sugar 3 tsp Flour ¼ tsp Salt 4-5 Eggs (1 Cup) 2 Egg Yolks ¼ Cup Whipping Cream
Original Crust-
1 Cup of Flour ¼ Cup Sugar 1 tsp Grated Lemon Peel ¼ Cup Butter 1 Slightly Beaten Egg Yolk ¼ tsp Vanilla
Graham Cracker Crust- Double if needed
1 ½ Cup Graham Cracker Crumbs 1/3 Cup Butter- Melted 1/3 Cup Sugar

Directions:Preheat oven to 400º
Original Crust-
Mix first 3 ingredients Cut in butter until crumbly Add beaten egg yolk and vanilla, mix well Pat 1/3 of the dough on the bottom of pan and remove the sides Bake for 8 min Remove from oven and cool and reattach the sides of pan Pat remaining dough on all sides 1 ¾ in high Add Filling
Graham Cracker Crust-
Preheat oven to 350º
Mix all ingredients together and press evenly across bottom springform pan. Bake for 8 to 10 minutes; cool and fill.
Filling-
Beat cream cheese until smooth Add vanilla and lemon peel and mix Add sugar, flour and Salt and mix Slowly add in cream cheese Add eggs and egg yolks 1 at a time, beating well after each addition Gently stir in whipping Cream Pour into pan
Bake at 450º for 12 min
Then reduce heat to 300º and bake for 55 min or until knife inserted in center comes out clean
Cool for 30 mins and loosen sides of pan Cool 30 mins more and then remove side Cool for 2 hrs more then chill in refrigerator |
