1/4 cup chili powder
2 TBS whole cumin seeds (optional - I never used them)
1/4 tsp cayenne pepper
1/2 tsp cinnamon
2 tsp dried oregano
3 bay leaves
2 tsp honey
4 pounds steak, cut into 1" cubes
1 tsp black pepper
1 1/2 TBS salt (I used less)
3 TBS oil
4 cups chopped onions (2-3 depending on size)
1 1/2 cups chopped celery (about 4 ribs)
6 cloves of chopped garlic
2 jalapeno chilies, seeded and roughly chopped
1 1/2 cups stock (beef, chicken or veg - I use beef)
2 TBS tomato paste
1 28 oz can crushed tomatoes
1 oz semisweet or dark chocolate (If GF is important, be sure your chocolate is GF)
3 TBS masa harina (optional - I never used)
2 cups water
2 cups chopped butternut squash
1/2 cup chopped cilantro (optional - I never used)
1/2 cup chopped parsley
Grated cheddar, chopped green onions and/or sour cream for garnish

Directions:

Combine the first 7 ingredients in a bowl and set aside.

Season beef with salt and pepper

Heat oil in large, deep skillet over high heat, brown the beef in this, transferring to the crock pot once browned.

When the beef is finished, add onion, celery and 1 TBS of remaining salt, cook until veggies begin to soften. Add garlic, jalapenos and spice mixture and cook for another minute.

Pour in stock, paste and crushed tomatoes and simmer for three minutes, stir in chocolate, masa harina and more salt, if needed. Transfer this mixture to the slow cooker with the beef. Add the water and squash. Cover and cook on high for 6 hours, until beef is very tender.

Remove bay leaves and stir in cilantro and parsley. Serve with garnishes as desired.

I do not like beans, so I dislike chili that is made with beans. Still, I searched for a recipe that did not have beans and found this one at a site called Perry's Plate.

It is amazing. I love the touch of chocolate and the squash.

We serve this with fresh cornbread and it cannot be beat.
