2 TBS olive oil
1 TBS butter
1 1/2 cups chopped onion
1 TBS sugar
4 oz goat cheese
1 egg
2 TBS cream or milk, approximately
Pie crust (use premade or make your own)
Thyme for garnish

Directions:
Directions:
Put olive oil and butter in pan over medium heat, saute onion and sugar until the onion is nicely browned and soft.

Preheat oven to 350º

Combine goat cheese, egg and milk, then add cooked onions.

Using a mini-pie pan, put prepared crust in each mini-pie, then spoon goat cheese mixture over the top - about a teaspoon for each pie. You can also put the onions in first, then spoon some of the cheese mixture over them - works fine either way. Garnish with Thyme.

Bake until tarts start to turn slightly brown. Serve hot or freeze and reheat
