1 (10 oz.) pkg. mini marshmallows (about 5 cups)
1/4 c. unsalted butter (1/2 stick)
1/2 c. peanut butter
6 c. Rice Krispies cereal

In a large microwave-safe bowl, heat butter and marshmallows on Medium-High for 2 to 3 minutes, or until marshmallows are completely melted (microwave cooking times may vary). Stir in peanut butter until smooth. Add the Rice Krispies, stir until well coated. Evenly press mixture into a 13x9x2-inch pan coated with cooking spray (lightly spray your hands with cooking spray to avoid mixture sticking to your hands). Add topping if desired. Cool completely, cut into 2-inch squares. Best if served the same day.

8 oz. peanut butter chips or chocolate chips, about 1 1/3 cups
2 tsp. vegetable oil

In a microwave safe bowl, microwave the chips for 30 second intervals on medium power; stirring after each interval. Once almost melted, stir until smooth, then stir in vegetable oil, mix well to combine thoroughly. Pour mixture over the top of Krispies and let harden at room temperature- about 2 hours.
