Whole kosher chicken (take out the guts)
Flanken (1-2 pieces)
Parsnip (2-3 peeled)
Carrots (4-5 peeled)
Celery (3-4 stalks)
1 whole onion
1 whole turnip
bunch of parsley
bunch of dill
salt & pepper

Directions:
Place the flanken in a LARGE pot and cover with about 4 quarts of water or whatever looks right. After it boils for a while, you will see a foam atop the water. Scoop this foam off and put it in the garbage or something. Then - gently - place the chicken in the pot. Boil that for a while and pay attention. Keep skimming that foam off the top. Once the chicken has boiled for a bit, place all the vegetables in the pot. Add salt and pepper to taste. Boil that up and then eventually - after a time - lower the heat to a soft simmer. Let it simmer for a long time. You want it to acquire a deep, golden hue. Then use a strainer of some sort and pour the soup through the colander into a smaller pot. Take the soup chicken, flanked, and any good-looking carrots and parsnips and place them in an extra container. Let the soup cool off, chill it overnight in the fridge, and then in the morning, you skim the fat off the top. This fat is shmaltz and can be used for other recipes. I don't know any of those recipes.

Heat and eat with egg noodles and/or matzo balls.

This soup is basically from memory. I watched my mother and both of my grandmothers do this many times. I never asked for measurements, nor do I use them. Each time I make this soup, it's a gamble. But somehow it works!
