1 pkg (3oz) cream cheese, softened
2 cups (1lb) dry cottage cheese
1 egg yolk
2 tbsp. granulated sugar
1/2 tsp vanilla extract

BLINTZES
2 eggs
2 tbsp. oil
1 cup milk
3/4 cup sifted all purpose flour (sift before measuring)
1/2 tsp salt

1/4 cup butter or margarine
Confectioners sugar
1 cup dairy sour cream
1 pkg (10oz) thawed frozen strawberries or preserves

Directions:
1. Make Filling: In medium bowl, combine cheeses, egg yolk, granulated sugar and vanilla. Beat with electric mixer until smooth. Refrigerate, covered, while making blintzes.
2. Make Blintzes: In medium bowl, beat eggs, oil, and milk until well mixed. Add flour and salt. Beat until smooth.
3. Refrigerate, covered for 30 minutes. (Batter should be consistency of heavy cream)
4. For each Blintz: Melt 1/4 tsp butter in 7-inch skillet. Pour 1/2 tbsp batter. Cook over moderate heat until lightly browned on underside, then remove from pan. Stack blintzes, browned sides up, as you remove them from skillet.
5. Place rounded tablespoon of filling on browned side of each blintz, then roll up.
6. Melt rest of butter in large skillet. Add blintzes, seam side down. Saute until golden brown. Turn. Saute other side.
7. Serve hot, sprinkle confectioners sugar and accompanied by sour cream and strawberries.
