1½ C Dark Brown Sugar
1 C Butter
2 Eggs
1 Egg White
2 t Vanilla
1 t Baking Soda
1 heaping t Kosher Salt
2¼ C Flour
10 oz. Chocolate Chips

Directions:
Directions:
1. Put the Brown Sugar in a heat proof mixing bowl.
2. Melt the Butter until it turns amber in color and brown speckles appear on the bottom of the pan.
3. Pour the melted Butter over the Brown Sugar and stir.
4. In order, stir in Eggs, Egg White, Vanilla, Salt, Baking Soda and Flour.
5. Let the dough rest until it is no longer hot; stir in the Chocolate Chips.
At this point, I chill the dough for about a half an hour so that it becomes scoop able.
6. Scoop balls of dough tightly packed onto a parchment lined baking sheet.
Recipe says you should get about 32 balls of dough.
7. Freeze about 2 hours. Store frozen in a zip lock bag.

When you are ready to cook some of them:
Bake at 325º for 14 - 16 minutes until shiny on top.
Leave about 3" between dough balls on baking sheet.

The last time I made these I got 25 cookies; the first time I got 30. So, there is some guess work involved in the sizing.

After melting the butter, all the work can be done by hand in one big bowl.
